Lee Hillson, the executive chef at T.Cook’s at the Royal Palms since 2005, is calling it quits. He’s moving to The Phoenician to take a position as executive sous chef for the entire resort. His new job begins September 17.

Hillson, who has worked at T. Cook’s for 12 years (he started as sous chef position in 2000) says, “I love this place, but 12 years is a long time, and I gotta move on.” Hillson says he wants to expand and grow and he welcomes the opportunity to learn everything he can about operations on a large, luxury scale. His goal — down the road — is to move back East, near his wife’s family.

He’ll be handling banquets, scheduling and all the little operational details that make resort restaurants run smoothly.
