Former Taneko Tavern executive chef Devin Walsh has resurfaced as owner/executive chef at Calistro California Bistro, which opened earlier this week at DC Ranch Crossing in Scottsdale (18221 N. Pima Rd.).
Walsh’s menu emphasizes healthful, “farm to table” cooking, with Mediterranean-inspired small plates and appetizers, organic salads, and entrees such as rack of lamb with spiced carrot puree, braised market greens, preserved lemon, and almonds. To drink, there’s beer, wine, and an interesting cocktail list featuring house-infused vodkas.
Besides Calistro’s olive branch logo, green is definitely the color of the overall restaurant concept, from all-natural, locally raised meats and a variety of organic produce to sustainable wood to fuel the wood-fired hearth.
