Sweet Potato Apple Tower

Ingredients: For Tower Apples: 6 apples 2 Tbsp. sugar 2 tsp. cinnamon Pinch allspice
For Sweet Potato Mash: 2 large sweet potatoes, boiled 2 Tbsp. butter 1 ripe pear, medium chopped 1 Tbsp. honey 1 tsp. heavy cream Salt and pepper to taste
Instructions: Core apples and slice into 3 parts: top third, center third and bottom third. Combine sugar, cinnamon and allspice. Season apples with the mixture and bake for 10 minutes at 350 degrees. Set aside.
Combine sweet potato mash ingredients and mash until smooth. Layer a little of the potato mixture in between apple slices, making a tower. Cook for 20 minutes at 350 degrees and serve with rack of pork and apple cider jus.
