If you’re a fan of artisan micro-bakery Noble Bread, then you’ll be happy to hear the duo behind it — baker Jason Raducha and chef-partner Claudio Uricuoli — have plans to open a lunch restaurant in Central Phoenix later this year.

Called Noble Eatery, the new dining spot will be located at 2201 East McDowell Road in the former home of So We Meat Again. Raducha says Noble Eatery will be “a showcase for the bread” and a “place for Claudio to play.”

“We want to elevate lunch without elevating the price,” Raducha says of the restaurant’s goals.

Raducha, who started Noble Bread in his garage just a few years ago, says Noble Eatery won’t be a brick-and-mortar bread store for the company. Currently, Noble Bread is available to customers at local farmers markets.

In fact, to start you won’t even be able to buy Noble Bread at the eatery every day (though Raducha says eventually he’d like to be able to do so).

What you will find there is a small, ever-changing menu of “wood fired-focused” foods that will be divided into four categories: Bites, Grains and Legumes, Salads, and Sandwiches. Uricuoli will be baking Italian schiacciata, making Noble Bread crutons, and making tartines that feature the bakery’s bread.

Right now, Raducha says, they’re waiting on permits and don’t have a firm opening date yet.
