When I heard that The Art of Soup was expanding its hours to include breakfast service, I had to stop myself from shaking my head in bewilderment.

Of course soup for breakfast makes sense. The Vietnamese already have that figured out (pho), and so do the Japanese (miso), and the Mexicans (menudo).

Owner Janet Van Winkle is expanding her menu of organic, homemade soups to include morning-appropriate fare like bacon and egg soup, as well as frittatas, homemade granola and muffins, and bread from Simply Bread. Van Winkle promises to keep vegan and vegetarian soups in the rotation as well.

Breakfast runs from 6:30 to 10 a.m., Monday through Saturday, at 2329 N. 7th St. Lunch is from 10 a.m. to 2:30, and beginning next week, on October 16, The Art of Soup will be open for BYOB dinner as well, from 5:30 to 8:30 p.m.
