Local restauranteur German Osio, the man behind such spots as Local Bistro and SumoMaya, has plans to expand his collection of dining spots by one later this year.

In December, Osio and the Osio Culinary Group team plan to open a fourth restaurant called Kale & Clover: Mindful Kitchen at 20511 N. Hayden Road at Hayden Peak Crossing in Scottsdale. Executive chef Chris Mayo will oversee the new restaurant in addition to serving as executive chef at Osio’s central Phoenix restaurant, Central Bistro.

The fourth restaurant to come from the Osio Culinary Group will be a fast-casual restaurant the offers “clean, healthy food and drinks.” In addition to dine-in and take-out options, health food lovers on the go can look forward to ready-to-eat meals.

The menu will be mainly vegetarian, vegan, and gluten-free though diners will have the choice to add proteins to many of the dishes.

Look forward to dishes such as a superfood salad with kale, romaine hearts, shaved vegetables, avocado, almonds, apricots, and lemon dressing; caramelized cauliflower with caper-raisin jam, lentils, local carrots, and curry vinaigrette; and seared salmon with red quinoa, marinated cherry tomatoes, avocado, and a light herb vinaigrette.

There are even plans for a Faux Pho dish with red miso shiitake broth, rice noodles, tofu, Thai basil, sprouts, chilies, and lime.

On the drinks side, expect cold-pressed juice, agave-sweetened sodas, and espresso drinks. The restaurant will also serve beer and wine.
