This week: The House Paloma at Spotted Donkey Cantina

There’s something about the word donkey that makes us smile. Especially when you add a little tequila in the mix. Exhibit A: North Scottsdale’s Spotted Donkey Cantina and their extensive list of signature margaritas and hand crafted cocktails like the House Paloma.

This classic tequila-based cocktail is a Mexican staple and basically a margarita’s better looking, super cool older sister. Of course, Donkey’s version is all that and a bag of (tortilla) chips by taking the drink’s average ingredients then infusing, reducing and seducing.

Ingredients:

½ oz grapefruit reduction
½ oz fresh squeezed lime juice
1 ½ oz Cruz Reposado Tequila
splash of Fresca or lemon lime soda.

Combine grapefruit, lime juice and tequila in a shaker with ice and give the shaker a few good fist pumps (we are in Scottsdale, anyway). Pour result into an old fashioned glass that’s been rimmed with grapefruit infused sugar and top off with lemon lime soda. Garnish glass with a fresh grapefruit. Sip and smile.

Side note: Cruz tequila is not only delicious, it’s local. Known for its smooth taste with hints of agave, citrus and vanilla, it’ll make you say “Patron who?”
