Funny how there are so many sushi restaurants in the Valley, but so few places to get ramen. You’d think a quick, cheap, belly-warming bowl of soup would be readily available in every neighborhood, but it’s just not. You’ll have better luck finding pho.
A new place is about to make the scene, though. Republic Ramen is set to open this month (they have a “now hiring” sign up) at 1301 E. University Dr. in Tempe.
The menu’s not available yet, but along with ramen, there will be other noodle dishes, boba drinks, and coffee. I’m looking forward to trying it . . .
