To describe chef Cullen Campbell, owner and chef of the Italian-inspired Crudo, as restless would be an understatement.

Still working on securing a new home for Crudo (rumored to be in Arcadia) since being kicked out of his Scottsdale location in July, Cullen has kept busy with pop-ups at Posh and Cycle in addition to traveling to Los Angeles for his birthday. Now, it seems the culinary pro has secured two months worth of pop-up gigs at Jam, an artisan’s boutique and craft space in the historic Charles Miller home in Old Town Scottsdale.

The pop-ups will take place at 7 p.m. every Friday in October and November, starting this Friday, October 7. Cullen tells me the three-course dinners will be BYOB and the menus will be a revolving array of familiar Crudo fare in addition to new dishes he’s anxious to serve when his restaurant re-opens.

“The space is small, so we’ll have room for about fourteen people a night,” Cullen says, “with the majority of seating on the patio.”

1st Course Albacore with salt roasted grapes, pine nuts, lemon, and chive.

2nd Course Butternut squash ravioli with a fried blossom and squash vinaigrette.

3rd Course Short ribs with smoked bone marrow and crispy truffled potatoes.

For all of chef Cullen’s Friday pop-ups at Jam, the cost is $35 with a one-time corkage fee of $10.
