Recently, I heard from chef Don Nason, who was the founding executive chef at Regions Bistro & Bar — and left shortly after the restaurant opened. There were rumors about the circumstances for Nason’s departure, so he wanted to tell me his side of things.
In an email, Nason told me, “On the record: I left because of unreconcilable differences of ideals on the subject of business ethics. The unfortunate timing of my departure had to do with those differences and the fact that there would be no fincancial compensation for the work I had done, and my resignation would not have been professionally accepted. The culinary team I put together at Regions Bistro and Bar is one of the best of my career, I love and respect those cooks and wish them all the best!”

Nason is back in New Mexico, doing guest chef gigs and setting his sights on opening his own restaurant in Roswell, NM, to be close to his family.
