Some of my favorite recipe pins on Pinterest are those that list the ingredients right in the description. It’s nice to know up front what’s required. This gummy fruit snack recipe was one of those pins, see.
Given the simplicity of the ingredients, and the fact that I’ve deprived my young children of these treats due to commercial products having excess sugar and additives, I thought I’d give them a try. Especially since I had leftover gelatin from the American cheese experiment.
While I learned about these on Pinterest, the recipe comes from a blog called All Day I Dream About Food.
Ingredients: 1 cup mixed berries (frozen worked fine) 1/4 cup water 1/2 cup applesauce 1/2 any kind of fruit juice (I used “Triple Berry” from Trader Joe’s) 2 envelopes gelatin

Process: Combine the berries and water in a saucepan over medium heat. Bring to a boil and cook until the berries are soft. Transfer to a blender and puree until the berries are smooth. Transfer them back to the pan, add the applesauce and bring to a boil. Remove from heat and set aside.
Place fruit juice in a large bowl and sprinkle gelatin on top. Let stand for one minute. Mix the berry mixture with the gelatin and transfer to an 8 x 8 glass or ceramic container. Allow it to cool completely in the fridge until set — about two or three hours.
Results: The recipe works and is easy, but the flavor is “meh.” I think they could use a tablespoon or two of sweetener. Or perhaps a different juice would make a difference too. I’d suggest pineapple, peach, or white grape.
In the end, I’m not sure I’d make these snacks again. My kids weren’t too crazy about them and neither was I. But the recipe is so easy, it’s definitely worth trying — and fiddling with flavors.
