So I went with the inside out “bleu burger,” an enormous half-pound monster. It might look plain, but the secret is the gooey blue cheese and bacon stuffed inside the meat. When you bite into it, it’s deliciously messy. (I drizzled some buffalo sauce on it for extra spice and sloppy goodness.) The skin-on fries were crisp, with fluffy potato middles.

My friend’s red chile beef enchilada was a nice specimen as well — the sauce was slightly fiery but had a rich, sweet pepper flavor. Gratefully, it wasn’t smothered with too much cheese. This was a nightly special, but I’d be happy to see it as a permanent menu addition.
