Is it any coincidence that the first day the weather forecast shows nothing but three-digit temperatures for the next week, I discover a brand-new ice cream shop? Finding week-old Pink Spot, which just opened its doors next to ZPizza on Thomas, came at the perfect time.
As you’d expect, there’s a whole lot of pink in this place — not pale bubblegum pink, but a deeper shade of Barbie pink. I was impressed by the retro diner chairs upholstered in sparkly hot pink vinyl.
A scoop of chocolate ice cream hit the spot — and for a “small,” it was such a big portion that I saved some of it in my freezer to finish the next day. The menu also had smoothies, shakes, and sundaes.
