The universe is listening to me. Remember me wishing that somebody would start selling homemade paletas, an obviously welcome treat in the middle of the Sonoran summer?

Last week Paletas Betty opened in downtown Chandler (96 W. Boston, Ste. 100), and I can’t wait to try it.

Owners Alvin Hong and Betty Alatorre set up their shop in the old yoga studio behind the former Fat Cat after traveling throughout the country, seeing gourmet Mexican popsicle businesses in other cities, and realizing that the Valley could use something like this.

Alatorre was born and raised in the Mexican state of Michoacan — famous for its popsicles, and the namesake for many brands here — so she already had the recipes and resources to make it happen.

Her seasonal menu of flavors currently includes 10 selections, including mango, roasted pecan, blackberry-lavender, rice pudding, Mexican hot chocolate, and betabel (beetroot, cinnamon, and orange). There’s also one daily flavor made especially for dogs — cool in more ways that one!
