After a Twitter conversation with local foodniks turned into “Hey, why doesn’t Posh step up and serve a late-night industry menu on Thursdays,” chef-owner Joshua Hebert met the challenge.
Why Thursday? Well, there are already late-night options on Friday and Saturday.
Last week was the debut, and I stopped by for some ridiculously good boar bacon (pictured above), served with asparagus and a tiny sunny-side-up quail egg. The so-called bacon had a mouthwatering smokiness, but this was no crispy, fatty little slab o’ pork. It was tender and meaty, a substantial dish. My informal poll of fellow food geeks out on the town that night agreed that this was the hands-down favorite.
