It’s always nice to see local folks representin’ the Valley proper-like when it comes to contests.
So when Rudi’s Gluten-Free Bakery, the Colorado-based purveyor of certified organic bread and baked goods sold in Whole Foods and Safeway stores, announced that one of the three finalists in their Unbelievably Good Gluten-Free Recipe Contest, was from Phoenix, our first few thoughts went like this: What’s Rudi’s? What contest? A finalist from Phoenix? Yay!
Annalyn Varalla Wills, whose “Prickly Pear Rudi-fied Goat and Rhubarb Treat” recipe was selected from hundreds of entries, joins two other finalists who also shared their personal gluten-free story and got creative with gluten-free bread in their recipes.
Get Wills’ gluten-free recipe and find out what she’ll need to do for the grand prize after the jump.

Wills, along with the other two finalists, will vie for a chance at the grand prize, which means a trip to Boulder, Colorado on June 24 for the Final Recipe Cook-Off.
