As we told you earlier this year, T. Cook’s at the Royal Palms Resort and Spa in Phoenix has been on the hunt for a new executive chef.
In February, chef Paul McCabe announced he would be leaving the resort to move to San Diego.
And now, after three months, T. Cook’s is ready to announce the name of the new head honcho.
Executive chef Todd Allison started at the resort restaurant last week, taking over for McCabe.

Allison comes to the resort from The Inn at Rancho Sante Fe in San Diego and brings more than a decade of experience to the restaurant. His past experience includes time at a number of California restaurants, including Anthology, a 13,000-square-foot live music venue and restaurant in San Diego, Hilton Checkers in downtown Los Angeles, and Bollinger’s in Santa Barbara.
McCabe, who only took over the kitchen at T. Cook’s in summer 2013, left Royal Palms to help relaunch the Town & Country Resort & Convention Center, the largest property owned by Destination Hotels, which also owns Royal Palms.
T. Cook’s underwent an extensive renovation in 2013 that included a physical re-model and a menu change that shifted the restaurant from a Mediterranean restaurant to one with a decidedly more New American twist. The new menu was in part designed to transition the traditionally fine dining restaurant into a more casual dining destination.
